12 metre high chimneys made
of pine wood, used for smoking ham and sausages.
They were built in the
middle of traditional Franche-Comté kitchens and in the
past were a central part of rural life.
These days, the
particular flavour imparted by pine smoke in the tuyés
of the Haut-Doubs is one of the distinctive aspects of
Franche-Comté gastronomy.
